One Pot Veggie Chilli – VERY tasty

1 x Quorn Mince 300g Bag (frozen) … or lean British beef if you aint a hedgeavarian.
1 x Chopped Tomatoes tin (or fresh, peeled tomatoes)
1 x Onion chopped up finely
Chilli Powder, 1 tbsp or to taste
Cumin, 1 tbsp
1x Garlic clove (or more to taste but go easy, they aren’t carb friendly)
Crushed Red Chili Pepper Flakes, 1 tsp or to taste
Fresh coriander, big handful finely chopped.

Put the whole lot in a (preferably heavy based) saucepan, stir very well.  Lid on, low heat – cook.  If using tinned tommys, its fairly quick and is done in 20 minutes.  if using fresh tomatoes, peel them, chop them, saucepan and cook a while until broken down (5 mins should do it) and then chuck everything in stir and cook.

This serves 3 or 4 – best if left in fridge overnight, zapped a la microwave and then enjoyed with a massive green salad and lashings of strong mature cheddar on the top.
